Coconut Cream Glazed Donuts

Ingredients

For the donuts:

  • ½ cup oat flour
  • ½ cup brown rice flour
  • ¼ cup potato starch
  • 1 ½ teaspoons sorghum powder
  • ¼ teaspoon cinnamon powder
  • ¼ teaspoon salt
  • 1/2 cup applesauce
  • ¼ cup coconut oil
  • 2 tablespoons ground flax meal mixed into six tablespoons water
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • ¼ teaspoon maple extract
  • 1 teaspoon molasses
  • 1 small green apple, diced

For the glaze:

  • 1 12-ounce BPA-free can coconut milk
  • 6-8 dried figs
  • 1 teaspoon molasses
  • Dash of salt
  • ¼ teaspoon vanilla extract

Directions

Preheat the oven to 350 degrees Fahrenheit. Grease a small donut pan with coconut oil spray and set aside.

Mix all of the dry ingredients in a medium-sized bowl. Mix the wet ingredients and diced apple in a separate medium-sized bowl. Fold the dry ingredients into the wet ingredients until well combined.

Equally fill each donut hole in the baking sheet with the donut mixture. Pop the baking sheet into the oven and cooked for ten to 12 minutes. Let cool slightly before adorning with the glaze.

For the glaze, add all the ingredients to a food processor and blend until smooth. Drizzle each donut with the glaze and start eating!
